Tasty Acai Bowls (inspired by Kona Hawaii Ironman World Champs)

I first tasted an Acai bowl when I was lucky enough to go to Kona in Hawaii with my husband when he qualified for the Ironman World Championships last year. I fell in love with the tasty and nutritious Acai bowl and have since developed my own version. Acai is a type of berry that contains a lot of antioxidants, this version simply has all the berries that we can get hold of locally!

Handful each of –

-Blueberries

-Raspberries

-Blackberries (or simply use a handful of mixed bag frozen fruit)

-200g plain low fat yoghurt

-1 Ripe Banana

3 tbsp Granola

1 tsp Chia seeds

1 tsp Mixed nuts (crushed)

1 tsp desiccated coconut

1 tsp honey

Method –

Blend together the berry fruits with the yoghurt. If you like a little sweetness just add a teaspoon of sugar. If you have an ice cream maker then pop it in to churn for 10-15 minutes; if not just pop it in the freezer and stir occasionally until it starts to set.

When the yoghurt is setting but still slightly soft scoop out some into a bowl, top with sliced banana, granola, chia seeds, mixed nuts, coconut and drizzle with honey.

Sit back, eat and enjoy!
